For the pudding;
Chia seeds 80g
Coconut cream 200ml
Almond, oat or coconut milk 200ml
Icing sugar 10g
For the salsa;
Fresh mango 1
Fresh lime 1
Icing sugar 10g
Fresh mint few leafs
Simply put the pudding ingredients into a bowl and mix well, store in the fridge over night.
Peel and chop the mango into 1cm chunks and place in a bowl along with the remaining salsa ingredients, leave in the fridge for 10 minutes.
Spoon a portion of the chia seed pudding into a bowl garnished with the salsa and shredded mint leafs. You can also add other garnishes for this quick and healthy breakfast dish, like grated fresh coconut or toasted cashews and almonds.
